A one-pan dinner classic featuring golden roasted potatoes, juicy Italian sausages, and sweet bell peppers tossed in olive oil, garlic, and herbs — simple, rustic, and bursting with flavor.

Ingredients

  • 5 Italian sausages (mild or spicy)
  • 1 1/2 lbs baby potatoes, halved
  • 2 bell peppers (red, yellow, or orange), sliced
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh chopped parsley (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large mixing bowl, toss potatoes and peppers with olive oil, garlic, oregano, basil, salt, and pepper.
  3. Spread the vegetables evenly on a large baking sheet. Nestle the Italian sausages between them.
  4. Roast for 35–40 minutes, flipping everything halfway through, until sausages are browned and potatoes are tender.
  5. Broil for 2–3 minutes at the end for extra crispness if desired.
  6. Garnish with fresh parsley and serve hot.

  • Cut potatoes uniformly for even roasting.
  • Add sliced onions or cherry tomatoes for more flavor.
