Ingredients

For the Cookies:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1/2 cup brown sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 1/2 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 2 tbsp finely ground Earl Grey tea leaves (about 4 tea bags)

For the Pink Lemon Glaze:

  • 1 1/2 cups powdered sugar

  • 2-3 tbsp lemon juice

  • 1-2 drops pink gel food coloring (or beet powder for natural color)

Instructions

  1. Prep Oven & Pans:
    Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. Cream Butter & Sugars:
    In a large bowl, beat butter, granulated sugar, and brown sugar together until light and fluffy.

  3. Add Eggs & Vanilla:
    Beat in eggs one at a time, followed by vanilla extract.

  4. Mix Dry Ingredients:
    In a separate bowl, whisk flour, baking soda, salt, and ground Earl Grey tea.

  5. Form the Dough:
    Gradually add dry ingredients to wet ingredients and mix until a soft dough forms.

  6. Shape & Bake:
    Scoop dough into 1.5 tbsp balls and place 2 inches apart on baking sheets.
    Bake for 10–12 minutes until edges are set and golden. Cool completely on wire racks.

  7. Make Glaze:
    Whisk powdered sugar with lemon juice until smooth. Stir in pink coloring for a soft pastel hue.

  8. Decorate:
    Drizzle glaze over cooled cookies. Let set for 15–20 minutes before serving or storing.

Notes

  • Cookies stay soft for days when stored in an airtight container.

  • For extra lemon flavor, add ½ tsp lemon zest to the glaze.
