2lbs (900g) potatoes, peeled and chopped
4cups fresh kale, chopped
1cup whole milk or plant-based alternative
3 tbsp butter
1 tsp salt
1/2 tsp black pepper
1 smoked sausage (rookworst), sliced
1 tbsp olive oil (for frying)
1 tsp mustard (optional, for serving)
Instructions
Boil the Potatoes & Kale – In a large pot, boil the potatoes in salted water for about 15 minutes or until tender. In the last 5 minutes, add the chopped kale to the pot.
Drain & Mash – Drain the potatoes and kale, then return them to the pot.
Add Creaminess – Add butter, warm milk, salt, and pepper, then mash everything together until smooth and creamy.
Cook the Sausage – In a pan, heat olive oil over medium heat and sauté the smoked sausage slices until browned.
Serve – Plate the mashed potato mixture and top with the browned smoked sausage. Serve with mustard on the side for extra flavor.
Notes
Substitute kale with spinach or endive for a different variation.
For a richer flavor, use bacon drippings instead of butter.
Traditionally served with gravy or pickles on the side.
