Ingredients

Units Scale
  • 2 lbs (900g) potatoes, peeled and chopped
  • 4 cups fresh kale, chopped
  • 1 cup whole milk or plant-based alternative
  • 3 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 smoked sausage (rookworst), sliced
  • 1 tbsp olive oil (for frying)

  • 1 tsp mustard (optional, for serving)

Instructions

  • Boil the Potatoes & Kale – In a large pot, boil the potatoes in salted water for about 15 minutes or until tender. In the last 5 minutes, add the chopped kale to the pot.
  • Drain & Mash – Drain the potatoes and kale, then return them to the pot.
  • Add Creaminess – Add butter, warm milk, salt, and pepper, then mash everything together until smooth and creamy.
  • Cook the Sausage – In a pan, heat olive oil over medium heat and sauté the smoked sausage slices until browned.

  • Serve – Plate the mashed potato mixture and top with the browned smoked sausage. Serve with mustard on the side for extra flavor.

Notes

  • Substitute kale with spinach or endive for a different variation.
  • For a richer flavor, use bacon drippings instead of butter.
  • Traditionally served with gravy or pickles on the side.
