Chicken & Rice

  • 1 lb boneless skinless chicken breasts
  • 2 cups Minute rice (white or brown)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) water
  • 1 tbsp butter (for greasing)
  • 1 envelope Lipton onion soup mix

Instructions

  1. Prepare Oven and Pan: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the cream of chicken soup, cream of mushroom soup, water, and Minute rice. Stir well to create an even mixture.
  3. Assemble the Dish: Pour the rice mixture into the prepared baking dish evenly. Lay the boneless, skinless chicken breasts on top of the rice mixture.
  4. Add Flavoring: Sprinkle the Lipton onion soup mix evenly over the top of the chicken breasts for added seasoning and flavor.
  5. Bake Covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 1 to 1½ hours until the chicken is fully cooked and the rice is tender.
  6. Optional Cheese Topping: For added richness, uncover the dish during the last 10 minutes of baking and sprinkle shredded cheese on top. Return to oven until cheese melts.
  7. Rest Before Serving: Remove from oven and let the dish stand for 5 minutes before serving to allow flavors to meld and temperature to even out.
