Chicken and Stuffing

  • 2 boneless, skinless chicken breasts
  • 4 ounce brie cheese, rind removed and cut into small pieces

  • 1/2 cup panko breadcrumbs

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Cranberry Sauce

  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 tablespoon olive oil

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it to prevent sticking.
  2. Make Cranberry Sauce: In a saucepan over medium heat, combine the fresh cranberries, honey, orange juice, cinnamon, and ginger. Cook the mixture until the cranberries burst and the sauce thickens, about 8 to 10 minutes. Remove from heat and let cool slightly.
  3. Prepare Chicken: Slice a pocket into each chicken breast carefully, avoiding cutting all the way through. Season both the inside and outside of each chicken breast with salt and pepper.
  4. Stuff Chicken: Fill each chicken breast pocket with pieces of brie cheese, a spoonful of the slightly cooled cranberry sauce, and chopped fresh parsley.
  5. Add Panko Topping: In a small bowl, mix melted butter with the panko breadcrumbs. Press this mixture firmly onto the top of each stuffed chicken breast to create a crunchy topping.
  6. Bake: Place the stuffed chicken breasts in the prepared baking dish. Bake in the preheated oven for 25 to 30 minutes, or until the chicken is fully cooked through and the topping is golden brown.
