Ingredients

Units Scale
  • 1 cup mashed sweet potato (cooked and skin removed)
  • 1 cup dark chocolate chips or chopped dark chocolate (70% cocoa or higher)
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons maple syrup (to taste)
  • 1/4 teaspoon sea salt
  • 1/3 cup unsweetened cocoa powder (for rolling)

Instructions

  1. Melt the dark chocolate gently using a double boiler or microwave in 30-second intervals, stirring until smooth.
  2. In a bowl, combine mashed sweet potato, melted chocolate, vanilla extract, maple syrup, and sea salt. Mix until fully incorporated and smooth.
  3. Chill the mixture in the refrigerator for about 30 minutes, or until firm enough to scoop.
  4. Using a small cookie scoop or spoon, form the mixture into balls and roll between your palms.
  5. Roll each truffle in cocoa powder to coat evenly.
  6. Store in an airtight container in the fridge for up to one week. Serve chilled or at room temperature.

Notes

  • Use roasted sweet potato for a deeper flavor and smoother texture.
  • Adjust maple syrup to your preferred sweetness level.
  • Try rolling in shredded coconut, chopped nuts, or matcha powder for variety.
  • These truffles are freezer-friendly for longer storage.
