A fresh and creamy snack featuring sliced cucumber wrapped around a flavorful avocado filling, seasoned with lime, garlic, basil, and nutritional yeast. A healthy, refreshing, and easy-to-make treat.

  • 1/4 cup fresh basil, chopped
  • 1 English cucumber
  • 1 clove garlic, minced
  • 2 tsp lime juice
  • 1/4 tsp black pepper
  • 1 tbsp nutritional yeast
  • 1/4 tsp salt
  • Smoked or sweet paprika for garnish

Instructions

  1. In a bowl, mash the avocado with a fork until smooth. Add minced garlic, chopped basil, lime juice, black pepper, nutritional yeast, and salt. Mix well until fully combined.
  2. Using a vegetable peeler or mandolin, slice the cucumber lengthwise into thin strips. Ensure the slices are wide enough to hold the filling.
  3. Place a spoonful of the avocado mixture at one end of each cucumber strip. Gently roll up to form a spiral or ‘roll’ shape.
  4. Sprinkle with smoked paprika for added color and a smoky flavor.
  5. Arrange the rolls on a plate and serve as a fresh appetizer, side dish, or snack.
