Crudaiola Barese Pasta Salad is a Southern Italian dish featuring al dente pasta tossed with fresh cherry tomatoes, garlic, basil, Parmigiano-Reggiano, and olive oil—simple, vibrant, and full of summer flavor.

Ingredients

  • 12 oz short pasta (casarecce, penne, or ziti)
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup grated Parmigiano-Reggiano
  • 1/4 cup extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside to cool slightly.
  2. In a large bowl, combine halved cherry tomatoes, minced garlic, torn basil, grated cheese, olive oil, salt, and pepper. Toss gently.
  3. Add warm pasta to the bowl and mix until well coated.
  4. Let rest for at least 15 minutes to allow flavors to meld.
  5. Serve warm, room temperature, or chilled. Garnish with extra cheese and basil if desired.
