These Crispy Accordion Potatoes (Easy Roasted Recipe) are a show-stopping side dish with buttery crisscrossed tops and golden edges. Perfectly seasoned and roasted until crisp, they’re an easy yet impressive way to elevate any meal with just a handful of simple ingredients.

Ingredients

  • 4 medium russet or Yukon gold potatoes

  • 3 tbsp unsalted butter, melted

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1/2 tsp onion powder

  • 1/2 tsp black pepper

  • 1/2 tsp salt (or to taste)

  • 1 tbsp chopped fresh parsley (optional, for garnish)

  • 1/4 cup grated parmesan (optional, for extra crispiness)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking dish with parchment paper or grease lightly.

  • Wash and dry the potatoes. Slice each in half lengthwise. Place flat-side down, and score a deep crisscross pattern into the rounded top without cutting all the way through.

  • Mix melted butter, olive oil, garlic powder, paprika, onion powder, salt, and pepper in a small bowl.

  • Brush this mixture generously onto the scored potatoes, making sure it seeps into the cuts.

  • Arrange potatoes in the baking dish cut-side up. Drizzle any leftover butter mix over the top.

  • Roast for 40–45 minutes, basting halfway through with pan drippings.

  • Optional: In the last 10 minutes, sprinkle grated parmesan on top and return to the oven until crisp and golden.

 

  • Garnish with fresh parsley and serve hot.

Notes

  • Use chopsticks as a guide when scoring to prevent slicing through the potato.

  • For ultra-crispy edges, broil for 2–3 minutes at the end (watch carefully).

  • Delicious served with sour cream or a garlic aioli on the side.
