Golden, cheesy, and irresistibly crisp, these baked parmesan zucchini fries are a healthy, quick snack or side dish—perfect for dipping or enjoying solo.

  • 3 medium zucchinis, sliced into 1/4-inch thick sticks or rounds
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated parmesan cheese
  • 1/2 cup panko breadcrumbs (optional for extra crunch)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Pat the zucchini slices dry with paper towels to remove excess moisture.
  3. In a large bowl, toss zucchini with olive oil, garlic powder, salt, and pepper until well coated.
  4. In a separate shallow bowl, mix parmesan cheese and panko breadcrumbs (if using).
  5. Dredge each zucchini slice in the parmesan mixture, pressing lightly to adhere.
  6. Arrange zucchini in a single layer on the prepared baking sheet without overlapping.
  7. Bake for 20–25 minutes, flipping halfway through, until golden brown and crisp.
