Preparation Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Unroll Pastry Unroll the puff pastry on a lightly floured surface. Sprinkle a generous layer of cinnamon sugar on top and gently roll to incorporate.
Flip and Repeat Flip the pastry over and repeat the cinnamon sugar application.
Fold Edges Fold both outer edges of the pastry toward the center. Dust with more cinnamon sugar, then roll lightly to adhere.
Repeat Folding Repeat the folding process two more times.
Slice Dough Slice the folded dough into strips that are slightly over ¼ inch wide. Press both ends into more cinnamon sugar.
Arrange and Bake Place the strips on the prepared baking sheet, leaving 2 inches apart. Bake for about 8-10 minutes until the bottoms are golden brown.
Flip and Bake Flip each cookie and bake for another 8-10 minutes until both sides are golden brown.
Cool Transfer the cookies to a wire rack to cool completely before serving.
