Ingredients

Units Scale
  • 2 ripe avocados, sliced into wedges
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • Cooking spray
  • Optional: spicy mayo or chipotle dip for serving

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with oil.
  2. Place flour in one bowl, beaten eggs in a second, and mix panko, garlic powder, paprika, salt, and pepper in a third.
  3. Dredge each avocado wedge in flour, dip in egg, then coat with the seasoned panko mixture.
  4. Arrange on the baking sheet without overlapping and lightly spray the tops with oil.
  5. Bake for 15–18 minutes or until golden and crispy, flipping halfway through.
  6. Serve hot with your favorite dipping sauce.

Notes

  • Use firm-ripe avocados to help maintain shape during coating and baking.
  • For extra crispiness, broil the fries for the last 1–2 minutes of baking.
  • Great with spicy mayo, ranch, or chipotle dip.
