- 2 ripe avocados, sliced into wedges
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt & pepper to taste
- Cooking spray
- Optional: spicy mayo or chipotle dip for serving
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with oil.
- Place flour in one bowl, beaten eggs in a second, and mix panko, garlic powder, paprika, salt, and pepper in a third.
- Dredge each avocado wedge in flour, dip in egg, then coat with the seasoned panko mixture.
- Arrange on the baking sheet without overlapping and lightly spray the tops with oil.
- Bake for 15–18 minutes or until golden and crispy, flipping halfway through.
- Serve hot with your favorite dipping sauce.
Notes
- Use firm-ripe avocados to help maintain shape during coating and baking.
- For extra crispiness, broil the fries for the last 1–2 minutes of baking.
- Great with spicy mayo, ranch, or chipotle dip.
