Creamy Tuscan Spring Chicken features golden-seared chicken breasts simmered in a rich garlic cream sauce with sun-dried tomatoes, spinach, and parmesan—an easy, flavorful one-pan meal perfect for spring nights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tsp Italian seasoning
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach
  • 1 cup chicken broth (low-sodium)
  • 2 tbsp lemon juice
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook 5–6 minutes per side or until golden brown and cooked through. Transfer to a plate and set aside.
  3. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1–2 minutes until fragrant.
  4. Pour in chicken broth and lemon juice. Simmer for 2–3 minutes, scraping up any browned bits from the pan.
  5. Reduce heat to low and stir in the heavy cream and grated parmesan. Simmer until the sauce thickens slightly.
  6. Add fresh spinach and stir until wilted.
  7. Return the chicken to the skillet and spoon the sauce over the top. Simmer for 2–3 minutes more to heat through.
  8. Serve hot with pasta, rice, or crusty bread.
