Scale
  • 12 oz farfalle (bowtie) pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced (cremini or button)
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (more to taste)
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 cup cream cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped (plus more for garnish)

Instructions

  1. Cook the farfalle pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Add mushrooms, sun-dried tomatoes, Italian seasoning, salt, black pepper, and red pepper flakes. Cook for 5–7 minutes, until mushrooms are soft and golden.
  4. Stir in heavy cream, whole milk, and cream cheese. Stir until smooth and fully incorporated.
  5. Add mozzarella and Parmesan cheese. Stir until melted and creamy.
  6. Preheat oven to 375°F (190°C).
  7. In a greased 9×13-inch baking dish, combine the cooked pasta with the creamy sauce mixture and chopped parsley. Mix well to coat.
  8. Top with additional cheese if desired and bake uncovered for 15–20 minutes, until bubbly and lightly golden.
  9. Remove from oven, garnish with fresh parsley, and serve hot.

  • Add cooked chicken or spinach for extra protein or greens.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or microwave.
