Instructions
Cook the gnocchi: Cook the gnocchi according to the package instructions in a large pot of rapidly boiling salted water. This usually takes about 2-3 minutes until they rise to the surface. Drain. and set them aside.
Sauté garlic: Heat a little olive oil in a large skillet over medium heat. Add finely chopped garlic and sauté for about 1–2 minutes, until golden brown and fragrant.
Cook salmon: Add the diced salmon fillets to the skillet and sauté for 3–4 minutes, until golden brown and slightly crumbled.
Simmer cream and spinach: Pour the heavy cream into the skillet and bring to a gentle simmer. Add the fresh spinach and cook for another 2–3 minutes, until wilted.
Combine gnocchi and sauce: Add the cooked gnocchi to the salmon and cream mixture in the skillet and toss to combine. Season to taste with salt and pepper.
Serve: Serve the creamy salmon gnocchi hot on plates and garnish with fresh herbs, if desired.
