Ingredients

Units Scale

or the Soup:

  • 4 large onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 4 cups beef broth (or vegetable broth)
  • 1/2 cup white wine (optional)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or milk for a lighter version)

For Topping:

  • 4 slices of French bread, toasted
  • 1 cup shredded Gruyère or Swiss cheese

Instructions

  • Caramelize the Onions: In a large pot, heat butter and olive oil over medium heat. Add onions, salt, and pepper, and cook slowly, stirring often, until deep golden brown (about 30 minutes).
  • Thicken the Soup: Sprinkle flour over the onions, stir well, then add white wine and cook for 2 minutes.
  • Simmer: Pour in beef broth, Worcestershire sauce, and thyme. Simmer for 15 minutes.
  • Add Cream: Stir in heavy cream and cook for another 5 minutes until creamy and well combined.
  • Prepare the Toppings: Ladle the soup into oven-safe bowls, top with toasted bread, and sprinkle generously with shredded cheese.
  • Broil: Place under a broiler for 2-3 minutes, until the cheese is melted and golden brown.
  • Serve Hot & Enjoy!

Notes

  • For extra depth of flavor, use homemade broth or add a dash of balsamic vinegar.
  • Swap heavy cream for coconut milk for a dairy-free version.
  • Add a pinch of nutmeg for extra warmth.
