Meatballs

  • 1 lb ground meat (beef, chicken, or turkey)
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 onion, finely chopped
  • 4 cloves garlic, minced
  • Salt and black pepper, to taste

Sauce & Garnish

  • 1 tbsp fresh ginger, minced
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Mix Meatball Ingredients: Mix ground meat, onion, garlic, breadcrumbs, egg, salt, and pepper in a bowl.
  2. Form Meatballs: Form into small meatballs.
  3. Brown Meatballs: Heat olive oil in skillet, brown meatballs on all sides. Remove and set aside.
  4. Sauté Aromatics: In same skillet, sauté garlic and ginger briefly.
  5. Make Sauce: Whisk in red curry paste and coconut milk until smooth.
  6. Simmer Sauce: Add soy sauce and lime juice, simmer sauce to thicken slightly.
  7. Cook Meatballs in Sauce: Return meatballs to skillet, simmer 10–15 minutes until cooked through.
  8. Garnish and Serve: Garnish with cilantro and serve hot.
