1 1/3lbs broccoli florets, finely chopped into bite-sized pieces
8 slices crispy cooked bacon, crumbled
1/2cup sweetened dried cranberries
1/3cup red onion, finely diced
1/3cup sliced almonds
1cup mayonnaise
1 1/2 tbsp granulated sugar
3 tbsp apple cider vinegar
1/4 tsp freshly ground black pepper
Instructions
In a large bowl, combine the chopped broccoli, crumbled bacon, cranberries, red onion, and sliced almonds.
In a separate smaller bowl, whisk together the mayonnaise, granulated sugar, apple cider vinegar, and black pepper until smooth and creamy.
Pour the dressing over the broccoli mixture and toss until everything is well coated.
Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
Stir once more before serving, and enjoy chilled or at room temperature.
Notes
For a healthier option, use low-fat mayonnaise.
You can substitute sunflower seeds for almonds if desired.
