Tender, juicy, and full of flavor, these country-style pork ribs are pressure-cooked in the Instant Pot and finished under the broiler with a sticky BBQ glaze. A quick and hearty comfort food dish.

Ingredients

Scale
  • 3 lbs country-style pork ribs
  • 1 tbsp olive oil
  • 1 cup chicken broth
  • 1/2 cup barbecue sauce (plus extra for brushing)
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp chili powder (optional)
  • Salt & pepper, to taste

Instructions

  1. Pat the pork ribs dry with paper towels. Rub with smoked paprika, garlic powder, onion powder, chili powder (if using), salt, and pepper.
  2. Set the Instant Pot to Sauté mode. Add olive oil and sear the ribs on all sides until lightly browned. Remove and set aside.
  3. Pour chicken broth and apple cider vinegar into the pot to deglaze, scraping the bottom to release any browned bits.
  4. Return the ribs to the pot. Add barbecue sauce and brown sugar.
  5. Seal the lid and cook on Manual High Pressure for 35 minutes.
  6. Allow pressure to release naturally for 10 minutes, then perform a quick release.
  7. Preheat your broiler. Transfer the cooked ribs to a baking sheet, brush with extra BBQ sauce, and broil for 4–5 minutes until caramelized and sticky.
  8. Serve hot with additional BBQ sauce on the side.

Notes

  • For spicier ribs, increase the chili powder or add a dash of hot sauce to the BBQ sauce.
  • Boneless country-style ribs work best for even cooking and serving.
  • Use a silicone basting brush for even sauce application.
