Instructions

  1. Prepare the cookie dough: In the bowl of a stand mixer, combine the melted butter, granulated sugar, light brown sugar, and vanilla extract. Mix on medium speed for 1 minute. Add the eggs and mix on low speed until fully combined. Incorporate the flour, corn starch, cocoa powder, baking soda, and salt on low speed until the dough is thoroughly mixed.
  2. Scoop and chill the dough: Line a baking sheet with parchment paper. Using a medium cookie scoop (about 2-2.5 tablespoons), portion out 20 even cookie dough balls onto the sheet. Refrigerate the dough balls for 30 minutes to enhance flavor and prevent spreading.
  3. Bake the cookies: Preheat the oven to 350°F (175°C). Space the chilled dough balls about 2 inches apart on the parchment-lined baking sheet. Bake for 9-10 minutes until the edges are just set. Let the cookies cool on the baking sheet for 3 minutes, then transfer to a wire rack to cool completely.
  4. Make the ganache: While the cookies cool, break the chocolate into pieces if using bars and place in a heatproof bowl. Heat the heavy cream on the stove over medium heat until it just starts to simmer. Pour the hot cream over the chocolate and let it sit for 5 minutes.
