Ingredients

  • 4 ears of corn, husked

  • 2 tablespoons olive oil

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 tablespoons chopped fresh parsley (for garnish)

  • Optional: drizzle of spicy mayo or sprinkle of Parmesan

Instructions

  • Preheat your oven to 400°F (200°C) or set your air fryer to 400°F.

  • Carefully cut each ear of corn into quarters lengthwise to create rib-like strips.

  • In a large bowl, mix together the olive oil, smoked paprika, garlic powder, chili powder, salt, and black pepper.

  • Toss the corn ribs in the seasoned oil mixture until well coated.

  • Arrange the corn ribs on a baking sheet lined with parchment paper or in the air fryer basket.

  • Roast or air fry for 12-15 minutes, turning halfway through, until the ribs curl and the edges are golden brown and crispy.

 

  • Garnish with fresh parsley and, optionally, drizzle with spicy mayo or sprinkle with Parmesan before serving.

Notes

  • Cutting corn lengthwise can be tricky — use a very sharp knife and go slowly for safety.

  • For an extra smoky flavor, finish the corn ribs on a grill for a couple of minutes.

  • Delicious served with dipping sauces like ranch, chipotle aioli, or garlic butter!
