Cookies and Cream Mousse Cups with Salted Caramel are indulgent, no-bake vegan desserts featuring a rich Oreo crust, silky dairy-free chocolate mousse, and a golden salted caramel drizzle. Topped with chocolate curls and flaky sea salt, these decadent treats are perfect for entertaining or satisfying your chocolate cravings.

Ingredients

For the Oreo Crust:

  • 1 1/2 cups crushed Oreo cookies (about 18 cookies)

  • 4 tablespoons vegan butter, melted

For the Mousse:

  • 1 cup dairy-free chocolate chips (or dark chocolate)

  • 3 tablespoons strong brewed coffee or plant-based milk

  • 1 1/2 cups chilled coconut cream (or solid part of full-fat canned coconut milk)

  • 1 teaspoon vanilla extract

  • 1/4 cup powdered sugar

For the Topping:

  • 1/2 cup vegan caramel sauce (store-bought or homemade)

  • Dark chocolate curls or shavings

  • Flaky sea salt


 

 

Instructions

  1. In a bowl, combine crushed Oreos and melted vegan butter. Press into the base of silicone muffin molds or ramekins to form the crust. Chill for 15 minutes.

  2. Melt chocolate chips with coffee (or milk) using a double boiler or microwave in 30-second intervals. Stir until smooth and let cool slightly.

  3. In a separate bowl, whip coconut cream with powdered sugar and vanilla extract for 3–4 minutes until fluffy.

  4. Fold the cooled melted chocolate into the whipped coconut cream until fully incorporated and smooth.

  5. Spoon mousse over chilled crusts, smooth the tops, and refrigerate for at least 2 hours or overnight.

  6. Before serving, drizzle each mousse cup with caramel sauce, sprinkle with flaky sea salt, and garnish with chocolate curls.

  7. Serve chilled and enjoy the decadence.

Notes

  • Use gluten-free Oreos for a completely gluten-free version.

  • Coffee enhances the chocolate flavor but can be substituted with any plant-based milk.

  • For homemade caramel, combine coconut milk, brown sugar, and a pinch of salt simmered until thick.

  • Mousse texture improves when chilled overnight.
