A refreshing, chilled tomato-based soup bursting with Mediterranean flavors, perfect for warm weather and light lunches.

Ingredients

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 slice day-old bread, torn
  • Salt and pepper to taste
  • 1/2 cup cold water (adjust for desired consistency)
  • Fresh basil or parsley for garnish

Instructions

  1. Combine the tomatoes, cucumber, bell pepper, onion, and garlic in a blender or food processor.
  2. Add the torn bread, olive oil, red wine vinegar, salt, and pepper.
  3. Blend until smooth. For a thinner consistency, gradually add cold water and blend again.
  4. Taste and adjust seasoning if needed. For a smoother texture, strain through a fine sieve.
  5. Chill in the refrigerator for at least 2 hours before serving.
  6. Garnish with fresh herbs and a drizzle of olive oil. Serve cold.

Notes

  • Use very ripe tomatoes for best flavor.
  • Bread can be soaked in a bit of water beforehand for smoother blending.
  • Adjust water and vinegar to taste for preferred thickness and acidity.
  • Can be made a day ahead for deeper flavor.
