  1. Melt Dark Chocolate: Gently melt the chopped dark chocolate using a double boiler or microwave in short bursts, stirring frequently to avoid burning. Once smooth, spread the melted dark chocolate evenly onto a parchment-lined baking sheet to form the base layer.
  2. Chill Dark Chocolate: Place the baking sheet in the refrigerator and chill until the dark chocolate is just set but not completely hard, which usually takes about 15-20 minutes. This helps the next layer to adhere properly.
  3. Melt White Chocolate & Add Peppermint: Melt the chopped white chocolate using the same gentle melting method. Once smooth, stir in the peppermint extract thoroughly to distribute the flavor evenly.
  4. Spread White Chocolate Layer: Pour and spread the white chocolate and peppermint mixture evenly over the chilled dark chocolate layer, creating a smooth top coating.
  5. Add Crushed Candy Canes: Immediately sprinkle the crushed candy canes evenly over the white chocolate layer while it’s still soft so they stick in place and add a festive crunch.
  6. Final Chill & Break: Return the baking sheet to the refrigerator and chill until the peppermint bark is completely firm, about 1 hour. Once set, remove from the fridge and break into irregular pieces to serve or package for gifting.
