Ingredients

Units Scale
  • 2 chicken breasts, butterflied
  • 1/2 cup flour
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • 1 tbsp olive oil
  • Spaghetti, cooked
  • Fresh parsley, for garnish
  • Bread, to serve

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Butterfly the chicken breasts for even thickness.
  3. Coat each piece of chicken in flour, then dip in beaten egg, and coat with breadcrumbs.
  4. Heat olive oil in a skillet over medium heat and pan-fry chicken until golden on both sides, about 3–4 minutes per side.
  5. Transfer the chicken to a baking dish. Spoon marinara sauce over each piece and top with shredded mozzarella and grated parmesan.
  6. Bake for 15 minutes or until cheese is melted and bubbly and chicken is cooked through.
  7. Serve with cooked spaghetti on the side. Garnish with fresh parsley and additional parmesan if desired.
  8. Add crusty bread on the side and enjoy!

Notes

  • For extra crispy chicken, use panko breadcrumbs.
  • Use freshly grated cheese for better melt and flavor.
  • You can use store-bought or homemade marinara sauce.
