Ingredients

  • 2 1/2 lbs (about 6 cups) peeled, cored, and sliced apples (Granny Smith, Honeycrisp, or mix)

  • 3/4 cup granulated sugar

  • 1/4 cup packed light brown sugar

  • 2 tbsp all-purpose flour

  • 1 tbsp lemon juice

  • 1 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/4 tsp salt

  • 2 tbsp unsalted butter, cut into small cubes

  • 1 egg (for egg wash)

  • 2 pie crusts (store-bought or homemade)

Instructions

  1. Preheat oven to 400°F (200°C). Place a baking sheet on the lower rack to catch drips.

  2. Roll out one pie crust and fit it into a 9-inch pie dish, letting the edges hang over slightly.

  3. In a large bowl, toss apple slices with granulated sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg, and salt. Let sit for 10 minutes.

  4. Pour the apple mixture into the prepared crust and dot with butter cubes.

  5. Roll out the second crust and lay it over the filling. Trim, seal, and crimp the edges. Cut a few slits in the top crust for steam to escape.

  6. Brush the top with a beaten egg.

  7. Bake for 45–50 minutes until the crust is golden and the filling is bubbling. Cover edges with foil if they brown too quickly.

  8. Let cool for at least 2 hours before slicing to allow the filling to set.
