Ingredients

Scale

Churro Dough

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter
  • 1/2 cup water
  • 2 large eggs

Cinnamon Sugar Coating

  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Cheesecake Filling

  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 egg yolk

Frying

  • Oil, as needed (for deep frying)

Instructions

  1. Prepare Churro Dough: In a medium saucepan, combine the water and butter. Heat over medium heat until the butter melts and the mixture boils. Remove from heat and stir in the flour, baking powder, and salt until a smooth dough forms. Let it cool for 5 minutes.
  2. Add Eggs to Dough: Once the dough has cooled slightly, add the eggs one at a time, mixing thoroughly after each addition until fully incorporated and the dough is smooth.
  3. Make Cheesecake Filling: In a mixing bowl, beat together cream cheese, powdered sugar, vanilla extract, and egg yolk until the mixture is smooth, creamy, and well combined.
  4. Prepare Piping Bag: Transfer the cheesecake filling into a piping bag and set it aside for filling the churro dough balls.
  5. Heat Oil: In a deep frying pan, heat oil over medium-high heat until it reaches frying temperature (about 350°F / 175°C).
  6. Mix Cinnamon Sugar: In a shallow bowl, stir together granulated sugar and ground cinnamon to create the coating mixture.
  7. Form Filled Churro Balls: Take a small portion of churro dough and flatten it into a disc. Pipe a portion of cheesecake filling into the center, then seal the dough around it, forming a ball.
  8. Fry Churro Bites: Carefully lower the filled churro balls into the hot oil. Fry for 3-4 minutes, or until golden brown and cooked through, turning occasionally for even color.
  9. Coat in Cinnamon Sugar: Remove the bites with a slotted spoon and immediately roll them in the cinnamon sugar mixture while they are still warm, ensuring an even coating.
  10. Repeat and Serve: Continue the process until all churro bites are fried and coated. Allow them to cool slightly before serving for the perfect warm dessert experience.

Notes

  • Ensure the dough is not too hot when adding eggs to avoid cooking them prematurely.
  • Use fresh oil for frying to achieve the best flavor and texture.
  • Seal the dough well around the cheesecake filling to prevent leaks during frying.
  • Serve churro bites warm for the best taste and texture.
  • Leftover churro bites can be reheated in an oven for a few minutes to restore crispiness.
