Ingredients

  • 50 g butter (melted and cooled)
  • 125 g buttermilk
  • 100 g sugar
  • 150 g all-purpose flour
  • 40 g unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 75 g dark chocolate (70% cocoa), chopped

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the egg, melted butter, buttermilk, and sugar until smooth.
  3. In a separate bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Stir in the chopped dark chocolate chunks.
  6. Spoon the batter into muffin cups, filling each about 2/3 full.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.
