Ingredients

  • 1/2 cup granulated sugar

  • 1 cup cold unsalted butter, cubed
  • 1/4 cup ice water (plus more as needed)
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (blueberries, blackberries, raspberries)
  • 1/4 cup granulated sugar (for filling)
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract (for filling)
  • 1/4 cup all-purpose flour (for crumble, optional)
  • 2 tablespoons brown sugar
  • 2 tablespoons butter, chilled

Instructions

  1. In a large bowl, whisk together flour, cocoa powder, sugar, and salt.
  2. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Add vanilla and ice water gradually, mixing until the dough comes together.
  4. Divide into two disks, wrap in plastic, and refrigerate for 1 hour.
  5. In a bowl, gently toss berries with sugar, cornstarch, lemon juice, and vanilla extract. Let sit for 10 minutes.
  6. Roll out one dough disk and fit into a 9-inch tart or pie pan.
  7. Fill with berry mixture. (Optional: Sprinkle with crumble made by mixing flour, brown sugar, and butter until crumbly.)
  8. Roll out the second dough disk and cut into strips. Weave over the filling to form a lattice.
  9. Use leftover dough to cut decorative leaves or flowers and place them around the crust edges.
  10. Chill the assembled pie for 15 minutes while preheating the oven to 375°F (190°C).
  11. Bake for 45–50 minutes, until crust is set and filling is bubbling. Cover edges with foil if they brown too quickly.
  12. Let pie cool completely before serving.

  • Use a mix of fresh or frozen berries—no need to thaw frozen berries before mixing.
