Delicate, crisp-on-the-outside, soft-on-the-inside strawberry meringues infused with sweet berry flavor and dipped in rich melted chocolate. These French-inspired pastel pink treats are ideal for romantic desserts, tea parties, or elegant gifts.

  • 3 large egg whites, room temperature
  • 3/4 cup granulated sugar
  • 1/4 tsp cream of tartar
  • 1/4 tsp salt
  • 1/2 tsp strawberry extract
  • Pink gel food coloring (optional)
  • 1/2 cup dark or semi-sweet chocolate chips, melted
  • Freeze-dried strawberries, crushed (optional for garnish)

Instructions

  1. Preheat oven to 225°F (110°C) and line a large baking sheet with parchment paper.
  2. In a clean, dry mixing bowl, beat the egg whites and cream of tartar on medium speed until foamy.
  3. Gradually add sugar, one tablespoon at a time, increasing to high speed. Beat for 5–7 minutes until stiff, glossy peaks form.
  4. Gently fold in salt, strawberry extract, and pink gel food coloring (if using) until fully incorporated.
  5. Transfer meringue to a piping bag fitted with a star tip. Pipe small swirls onto the prepared baking sheet, spacing evenly.
  6. Bake for 1 hour 30 minutes. Then turn off oven and let meringues cool inside with door slightly ajar for 1 hour.
  7. Dip the base of each cooled meringue into melted chocolate and place on parchment to set.
  8. Optionally, sprinkle crushed freeze-dried strawberries over chocolate before it hardens.
  9. Store in an airtight container at room temperature for up to 5 days.

  • Ensure bowl and beaters are completely grease-free for best meringue texture.
  • Do not open oven door during baking to avoid cracks.
  • Add food coloring gradually for a delicate pastel pink hue.
  • Use high-quality chocolate for best dipping results.
