Ingredients

  • 1/2 cup (115g) unsalted butter

  • 1 cup (100g) almond flour

  • 1/2 cup (60g) all-purpose flour

  • 1 cup (120g) powdered sugar

  • 1/4 teaspoon salt

  • 4 large egg whites

  • 1 teaspoon vanilla extract

  • 1 cup (170g) semi-sweet chocolate, melted

  • 1/4 cup chopped roasted nuts (optional, for texture)

  • Edible gold leaf (optional, for decoration)

Instructions

  1. Preheat your oven to 375°F (190°C) and butter a rectangular bar or financier mold.

  2. In a saucepan, melt the butter over medium heat until golden brown and nutty (beurre noisette). Set aside to cool slightly.

  3. In a large bowl, whisk together almond flour, all-purpose flour, powdered sugar, and salt.

  4. Lightly whisk the egg whites just until foamy.

  5. Add the egg whites and vanilla extract to the dry ingredients and mix gently.

  6. Gradually stir in the browned butter until the batter is smooth.

  7. Spoon the batter into the prepared molds, filling them about 3/4 full.

  8. Bake for 12-15 minutes, or until golden brown around the edges and set in the center.

  9. Allow the financiers to cool completely on a wire rack.

  10. Dip each bar halfway into the melted chocolate and sprinkle with chopped nuts if desired.

  11. Decorate with small flakes of edible gold leaf for an elegant finish.

  12. Let the chocolate set before serving.
