  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 tbsp strawberry jam
  • 2 tbsp freeze-dried strawberries, crushed
  • pink food coloring (optional)

Topping

  • 1 cup dark or semi-sweet chocolate chips
  • 1 tbsp coconut oil or shortening

Instructions

  1. Step 1 Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Step 2 Whisk together flour, baking soda, baking powder, and salt in a bowl.
  3. Step 3 Cream butter and sugar until light and fluffy, about 3 minutes.
  4. Step 4 Beat in egg, vanilla, strawberry jam, crushed freeze-dried strawberries, and food coloring if using.
  5. Step 5 Gradually mix dry ingredients into wet ingredients just until combined.
  6. Step 6 Scoop dough into 1½-tablespoon portions, roll into balls, and place 2 inches apart. Gently flatten.
  7. Step 7 Bake for 10–12 minutes until edges are set but centers remain soft. Cool completely.
  8. Step 8 Melt chocolate chips and coconut oil in the microwave until smooth, stirring every 30 seconds.
  9. Step 9 Drizzle melted chocolate over cooled cookies and allow to set before serving.
