3 tbsp strawberry jam
2 tbsp freeze-dried strawberries, crushed

1 cup dark or semi-sweet chocolate chips
1 tbsp coconut oil or shortening
Instructions
Step 1 Preheat oven to 350°F and line baking sheets with parchment paper.
Step 2 Whisk together flour, baking soda, baking powder, and salt in a bowl.
Step 3 Cream butter and sugar until light and fluffy, about 3 minutes.
Step 4 Beat in egg, vanilla, strawberry jam, crushed freeze-dried strawberries, and food coloring if using.
Step 5 Gradually mix dry ingredients into wet ingredients just until combined.
Step 6 Scoop dough into 1½-tablespoon portions, roll into balls, and place 2 inches apart. Gently flatten.
Step 7 Bake for 10–12 minutes until edges are set but centers remain soft. Cool completely.
Step 8 Melt chocolate chips and coconut oil in the microwave until smooth, stirring every 30 seconds.
Step 9 Drizzle melted chocolate over cooled cookies and allow to set before serving.
