Ingredients

Units Scale
  • 1 1/2 cups graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • 2 tbsp sugar
  • 40 Kraft caramels
  • 1/2 can (7 oz) sweetened condensed milk
  • 1 tbsp butter
  • 32 oz cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1/4 cup cornstarch
  • 1 tbsp pure vanilla extract
  • 3/4 cup heavy whipping cream
  • 12 oz semisweet chocolate, chopped
  • 1/2 cup heavy whipping cream (for ganache)
  • 1 tbsp butter (for ganache)
  • 1 cup fun-sized Twix bars, halved or whole

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan and bake for 10 minutes. Let cool.
  3. In a small saucepan, melt caramels with sweetened condensed milk and 1 tbsp butter over low heat. Stir until smooth and pour over the crust. Chill for 10 minutes to set.
  4. For the filling, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in cornstarch, vanilla, and cream until creamy.
  5. Pour the batter over the chilled caramel layer. Bake for 50–55 minutes until the center is nearly set. Cool for 1 hour, then chill for at least 4 hours or overnight.
  6. To make the ganache, heat cream until simmering and pour over chopped chocolate and butter. Let sit 2 minutes, then stir until glossy.
  7. Pour ganache over the chilled cheesecake and spread evenly. Top with Twix bars in a circular pattern.
  8. Chill 30 minutes before slicing and serving.

Notes

  • Use room temperature cream cheese for a smoother filling.
  • Let ganache cool slightly before pouring to avoid melting the cheesecake.
  • Chill the cheesecake thoroughly for clean slices.
  • Store leftovers in the refrigerator for up to 5 days.
