  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • For the rice:
  • 1 cup long-grain rice
  • 2 cups chicken broth or water
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric (for color and flavor)

  • For the sauce:
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • For the toppings:
  • 1 cup cherry tomatoes, halved
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the rice: In a medium pot, heat olive oil over medium heat. Add the rice and sauté for 2-3 minutes until lightly toasted. Add chicken broth (or water), turmeric, and salt, and bring to a boil.
  2. Reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
  3. Cook the chicken: Preheat a grill pan or skillet over medium heat. Season the chicken breasts with olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper.
  4. Grill the chicken for 6-7 minutes per side, or until fully cooked through and the internal temperature reaches 165°F (75°C). Remove from the heat and let it rest for a few minutes before slicing.
  5. Make the sauce: In a small bowl, combine Greek yogurt, lemon juice, chopped parsley, salt, and pepper. Stir well to combine.
  6. Assemble the dish: Place a generous scoop of rice on each plate. Top with the sliced grilled chicken and drizzle with the yogurt sauce. Garnish with halved cherry tomatoes and fresh parsley, if desired.
  7. Serve immediately and enjoy!

Notes

  • For extra flavor, you can add a drizzle of olive oil or a sprinkle of paprika on top of the finished dish.
