A delicious and easy-to-make chicken hoagie featuring tender chicken, crisp lettuce, and a creamy dressing all wrapped in soft sandwich rolls. Perfect for a quick lunch or dinner!

Ingredients

  • 4 hoagie rolls
  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup corn kernels (optional)
  • 1/4 cup chopped celery (optional)
  • 1 cup shredded lettuce

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add diced chicken and season with garlic powder, paprika, salt, and pepper. Cook for 5-7 minutes, or until the chicken is fully cooked and lightly browned.
  2. In a small bowl, mix together mayonnaise, Greek yogurt, Dijon mustard, and lemon juice to create the dressing.
  3. If using corn and celery, stir them into the dressing to add texture and flavor.
  4. Slice the hoagie rolls and layer the shredded lettuce inside each roll.
  5. Once the chicken is cooked, place it on top of the lettuce in each hoagie roll.
  6. Drizzle the creamy dressing over the chicken and close the rolls.

Notes

  • Optional vegetables like corn and celery can be omitted or substituted as desired.
  • Use pre-cooked or rotisserie chicken to save time.
  • For a spicier version, add a dash of hot sauce to the dressing.
