Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts, thinly sliced

  • 1 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 yellow onion, sliced

  • 2 cloves garlic, minced

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1/2 tsp smoked paprika

  • Salt and pepper, to taste

  • 1 cup shredded provolone or mozzarella cheese

  • Optional: hoagie rolls or lettuce wraps for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add chicken slices and season with garlic powder, onion powder, paprika, salt, and pepper.

  3. Sauté for 5–7 minutes, until browned and cooked through. Remove from skillet and set aside.

  4. In the same skillet, add a little more oil if needed and sauté onions and bell peppers until tender and slightly caramelized, about 8 minutes.

  5. Add minced garlic and cook for 1 minute more.

  6. Return cooked chicken to the skillet and stir everything together.

  7. Sprinkle shredded cheese over the top, cover with a lid, and let the cheese melt for 2–3 minutes.

  8. Serve hot as-is, or with hoagie rolls or lettuce wraps.

Notes

  • Use pre-sliced chicken or frozen pepper stir-fry mix to save even more prep time.

  • Swap provolone with mozzarella, cheddar, or a blend for different flavors.

  • For extra kick, add sliced jalapeños with the peppers.
