Ingredients

For the dough:

  • 2 1/4 teaspoons active dry yeast

  • 1 1/2 cups warm water (110°F/45°C)

  • 2 teaspoons sugar

  • 3 1/4 cups all-purpose flour

  • 1/2 cup yellow cornmeal

  • 1/2 cup unsalted butter, melted

  • 1 1/2 teaspoons salt

For the filling:

  • 3 tablespoons olive oil

  • 1 lb Italian sausage, cooked and crumbled

  • 3 cups shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

For the sauce:

  • 2 tablespoons olive oil

  • 1 (28 oz) can crushed tomatoes

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1/2 teaspoon red pepper flakes

Instructions

  1. In a large bowl, dissolve yeast and sugar in warm water. Let it sit until foamy, about 10 minutes.

  2. Add flour, cornmeal, melted butter, and salt. Mix and knead until dough is smooth and elastic. Cover and let rise for 1 hour.

  3. Preheat oven to 425°F (220°C). Grease a 12-inch cast iron skillet with olive oil.

  4. Roll out the dough and press it into the pan, pushing it up the sides to form a deep crust.

  5. Layer mozzarella cheese evenly over the bottom of the crust, add the cooked sausage, and then top with tomato sauce. Sprinkle Parmesan cheese over the top.

  6. Bake for 25–30 minutes, until the crust is golden brown and the sauce is bubbly.

  7. Let rest for 10 minutes before slicing. Serve hot.

Notes

You can swap out the sausage for pepperoni, veggies, or any other favorite toppings. The crust can also be par-baked for 10 minutes before assembling to make it extra crispy.
