Cheesy Grilled Veggie Sandwich (Quick & Easy!) – This crispy, golden grilled sandwich is packed with creamy cheese, fresh chopped veggies, and a burst of savory spices. Perfectly toasted and served with chips and dips, it’s a quick comfort snack or lunch option loved by kids and adults alike.

Ingredients

  • 6 slices white or multigrain bread

  • 1/2 cup mayonnaise

  • 1/4 cup grated mozzarella cheese

  • 1/4 cup grated cheddar cheese

  • 1 small onion, finely chopped

  • 1 small tomato, finely chopped

  • 1/2 small cucumber, finely chopped

  • 1/4 cup shredded cabbage or lettuce

  • 1/4 tsp dried oregano

  • 1/4 tsp chili flakes (optional)

  • Salt and pepper to taste

  • Butter for grilling

  • Ketchup and mayonnaise (for serving)

  • Potato chips (for side serving)

Instructions

  1. In a bowl, combine mayonnaise, mozzarella, cheddar, onion, tomato, cucumber, cabbage, oregano, chili flakes, salt, and pepper.

  2. Spread the veggie-cheese mixture generously over three bread slices. Top each with another slice to make sandwiches.

  3. Lightly butter the outer sides of each sandwich.

  4. Grill in a sandwich press or on a hot griddle until golden brown and the cheese melts.

  5. Cut each sandwich into triangles.

  6. Serve hot with ketchup, mayonnaise, and potato chips on the side.
