  • 1/2 cup glutinous rice flour (sweet rice flour)
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons milk (or water for dairy-free)
  • 1 tablespoon butter (or vegan butter)

For the Cheese Filling

  • 1/2 cup shredded mozzarella (or any melty cheese)

For Cooking

  • 1 tablespoon vegetable oil (for pan-frying)

Instructions

  • Prepare the Dough

    • In a bowl, mix mashed potatoes, glutinous rice flour, cornstarch, salt, pepper, milk, and butter until smooth and slightly sticky.
    • Knead the dough until it forms a soft, pliable ball.
  • Stuff with Cheese

    • Divide the dough into 6–8 portions.
    • Flatten each piece and place a small amount of shredded cheese in the center.
    • Seal the edges and roll into a smooth ball or disc shape.
  • Pan-Fry Until Golden

    • Heat vegetable oil in a pan over medium heat.
    • Cook each mochi for 3–4 minutes per side, or until golden brown and crispy.
    • Press lightly with a spatula to ensure even cooking.
  • Serve & Enjoy!

    • Serve warm while the cheese is gooey!
    • Optionally, sprinkle with chopped green onions, sesame seeds, or a drizzle of soy sauce for extra flavor.
