  • 1 cup grated carrot
  • 2 eggs
  • 1 cup shredded cheese (mozzarella or cheddar)

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for brushing)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine grated zucchini, carrot, cheese, eggs, green onions, flour, salt, and pepper. Mix until everything is well combined.
