  • 2 large red or yellow onions, cut into thick rings
  • 810 strips of bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Toothpicks (to secure, optional)
  • Ranch or preferred dipping sauce

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Separate onion slices into thick rings.
  3. In a small bowl, mix cheddar and mozzarella cheese with garlic powder and black pepper.
  4. Press a small amount of cheese mixture between two onion rings of similar size, forming a sandwich.
  5. Wrap each cheese-stuffed onion ring tightly with a strip of bacon. Use toothpicks if needed to secure.
  6. Place on the baking sheet and bake for 20–25 minutes, or until bacon is crispy and cheese is melted and bubbling.
