A warming, frothy blend of coconut milk infused with chai spices, fresh ginger, and sweet dates. This dairy-free drink is soothing, anti-inflammatory, and luxuriously aromatic—served simply with a star anise garnish.

  • 13.5 oz full-fat coconut milk
  • 1 cup water
  • 12 inch piece fresh ginger, peeled and roughly chopped
  • 4 Medjool dates, pitted
  • 1 whole star anise (plus extra for garnish)
  • ½ tsp ground cinnamon
  • ½ tsp vanilla extract
  • 12 pinches ground cardamom
  • 1 pinch ground cloves

Instructions

  1. In a small saucepan, combine coconut milk, water, ginger, dates, star anise, cinnamon, vanilla, cardamom, and cloves.
  2. Bring to a gentle boil over medium heat, then reduce to low, cover, and simmer for 5–10 minutes.
  3. Remove whole star anise.
  4. Carefully transfer the mixture to a high-speed blender.
  5. Blend for 1 minute until smooth and frothy.
  6. Pour into clean mugs and garnish with a single whole star anise per cup.

Notes

  • Use high-speed blender for the creamiest texture.
  • Adjust spice levels to taste—more cardamom or cloves for intensity.
  • Remove the whole star anise before blending to avoid bitterness.
  • Best served immediately while warm and frothy.
  • For extra heat, increase ginger to 2 inches.
