1 cup water
1–2 inch piece fresh ginger, peeled and roughly chopped
4 Medjool dates, pitted
1 whole star anise (plus extra for garnish)
½ tsp ground cinnamon
½ tsp vanilla extract
1–2 pinches ground cardamom
1 pinch ground cloves
Instructions
In a small saucepan, combine coconut milk, water, ginger, dates, star anise, cinnamon, vanilla, cardamom, and cloves.
Bring to a gentle boil over medium heat, then reduce to low, cover, and simmer for 5–10 minutes.
Remove whole star anise.
Carefully transfer the mixture to a high-speed blender.
Blend for 1 minute until smooth and frothy.
Pour into clean mugs and garnish with a single whole star anise per cup.
Notes
Use high-speed blender for the creamiest texture.
Adjust spice levels to taste—more cardamom or cloves for intensity.
Remove the whole star anise before blending to avoid bitterness.
