Instructions

  1. Prepare the lobster tails: Using kitchen shears, cut the top shell of each lobster tail down the middle. Gently lift the meat out and rest it on top of the shell in a butterflied position. Pat the lobster meat dry and season evenly with salt and black pepper.
  2. Make the Cajun garlic butter: In a small bowl, combine melted butter, Cajun seasoning, minced garlic, lemon juice, and smoked paprika (if using). Stir well until all the ingredients are fully blended to create a flavorful, spicy butter mixture.
  3. Brush and grill: Preheat your grill to medium-high heat, aiming for about 400°F (205°C). Generously brush the lobster meat with the prepared Cajun garlic butter. Place the lobster tails flesh-side up on the grill. Grill for 6 to 8 minutes, ensuring you brush additional butter over the lobster halfway through cooking. The lobster is done when the meat turns white, opaque, and slightly firm, with an internal temperature reaching 140–145°F (60–63°C).
  4. Finish and serve: Once off the grill, brush the lobster with any remaining Cajun butter for extra moisture and flavor. Squeeze fresh lemon juice over the top and garnish with fresh parsley if desired. Serve immediately with lemon wedges.
