Ingredients

  • 8 oz spaghetti or linguine

  • 2 lobster tails, cooked and chopped into chunks

  • 2 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • 1/4 cup dry white wine (optional)

  • Zest of 1 lemon

  • Juice of 1/2 lemon

  • 1/4 cup fresh parsley, chopped

  • Salt and black pepper, to taste

Instructions

  1. Cook pasta in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.

  2. Heat butter and olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.

  3. Add cherry tomatoes and cook for 4–5 minutes, until softened and blistered.

  4. Deglaze with white wine (if using) and let it reduce slightly.

  5. Stir in lemon zest, lemon juice, and chopped lobster. Cook for 1–2 minutes until lobster is heated through.

  6. Toss cooked pasta into the skillet. Mix gently, adding reserved pasta water as needed to loosen the sauce.

  7. Season with salt and black pepper. Sprinkle with chopped parsley.

  8. Serve immediately with extra lemon wedges and a drizzle of olive oil, if desired.
