Brownie Bites are rich, fudgy mini treats topped with silky ganache, fresh raspberries, crushed nuts, and sugar pearls. These easy chocolate desserts are perfect for parties, dessert platters, or bite-sized celebrations, delivering big flavor in a small package.

Ingredients

  • For the Brownie Bites:

    • 1/2 cup unsalted butter, melted

    • 3/4 cup granulated sugar

    • 1/2 cup brown sugar

    • 2 large eggs

    • 1 tsp vanilla extract

    • 1/2 cup all-purpose flour

    • 1/2 cup unsweetened cocoa powder

    • 1/4 tsp salt

    • 1/2 tsp baking powder

  • For the Ganache Topping:

    • 1/2 cup heavy cream

    • 1 cup dark chocolate chips or chopped chocolate

  • Toppings:

    • Fresh raspberries

    • Crushed peanuts or almonds

    • White sugar pearls

 

Instructions

  1. Preheat oven to 350°F (175°C). Line a mini muffin pan with paper liners.

  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.

  3. Beat in eggs and vanilla extract.

  4. Sift in flour, cocoa powder, salt, and baking powder. Stir just until combined.

  5. Spoon batter into prepared muffin cups, filling each about 3/4 full.

  6. Bake for 12–15 minutes, until a toothpick inserted comes out with moist crumbs. Let cool completely.

  7. For ganache, heat heavy cream in a small saucepan until just simmering. Pour over chocolate in a heatproof bowl. Let sit for 1 minute, then stir until smooth. Cool slightly.

  8. Pipe or spoon ganache over each cooled brownie bite.

  9. Top with one fresh raspberry, a sprinkle of crushed nuts, and sugar pearls.

 

Notes

Can be made ahead and stored in an airtight container for 2–3 days. Customize toppings to suit any theme or holiday!
