  • 4 slices rustic bread, toasted
  • 2 medium tomatoes, sliced
  • 6 ounces fresh mozzarella, sliced
  • 8 to 10 fresh basil leaves
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Toast the bread slices until golden and crisp.
  2. In a small bowl mix the sliced tomatoes with salt and black pepper.
  3. Place the toasted bread slices on a plate.
  4. Arrange tomato slices and mozzarella slices on each toast.
  5. Place under a broiler for 1 to 2 minutes until the cheese softens slightly.
  6. Add fresh basil leaves and drizzle olive oil over the top.
  7. Serve immediately while warm.
