Ingredients

Scale

Main Ingredients

  • 2 packages Applegate Naturals® Grilled Chicken Breast Strips OR about 3 cups cooked chicken, cubed
  • 1/2 cup fresh blueberries
  • 1/3 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup chopped walnuts
  • 1 tablespoon fresh rosemary leaves, chopped
  • 2 green onions, ends trimmed and sliced (white part and halfway up green part)

Dressing

  • 1/3 to 1/2 cup mayonnaise (Primal Kitchen or homemade recommended)
  • Sea salt and black pepper, to taste

Optional

  • Fresh lemon wedges for serving

Instructions

  1. Prepare the chicken: Remove the grilled chicken strips from the packages and roughly chop them into bite-sized cubes to ensure easy mixing and eating.
  2. Combine salad ingredients: In a large bowl, add the chopped chicken, fresh blueberries, diced celery, diced red onion, chopped walnuts, chopped rosemary, and sliced green onions. This combination provides a nice balance of savory, sweet, and aromatic flavors.
  3. Add the dressing: Start by adding 1/3 cup of mayonnaise to the bowl. Gently stir all ingredients together to evenly coat. Adjust the mayo quantity up to 1/2 cup, according to your preference for creaminess.
  4. Season to taste: Add sea salt and freshly ground black pepper to enhance the flavors. Stir again gently to incorporate seasoning evenly.
  5. Serve: This salad can be served tucked into butter lettuce wraps, over a bed of mixed greens, alongside cucumber slices, or with your preferred crackers. Garnish with additional green onions. Optionally, serve with fresh lemon wedges for a bright citrusy touch.

Notes

  • Store the Blueberry Chicken Salad with Rosemary in a glass airtight container in the refrigerator for up to 4 days to maintain freshness.
  • For a dairy-free and Whole30-compliant option, use compliant mayonnaise such as Primal Kitchen or homemade mayo without dairy.
  • If you prefer, swap walnuts for pecans or almonds based on taste preference or allergy considerations.
  • To lighten the salad further, you can reduce the amount of mayonnaise or use a Greek yogurt substitute if not restricting dairy.
