These Blueberry Cheesecake Protein Breakfast Bars are a delicious and portable breakfast option that combines creamy cottage cheese, ripe banana, and fresh blueberries into high-protein, custard-textured bars. Ingredients

Scale

Base Mixture

  • 1½ cups (360 g) cottage cheese, full fat recommended
  • 4 large eggs, room temperature
  • 1 cup (90 g) old-fashioned rolled oats
  • 1 ripe banana
  • ⅓ cup (80 ml) maple syrup
  • 1 tsp baking soda
  • 1 cup (150 g) fresh or frozen blueberries

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C). Line an 8×8-inch baking dish with parchment paper to ensure easy removal of the bars after baking.
  2. Blend the Batter: In a high-speed blender, combine the cottage cheese, eggs, rolled oats, banana, maple syrup, and baking soda. Blend for 30 to 45 seconds until the mixture is completely smooth and pourable, creating a custard-like batter.
  3. Add Blueberries: Pour the batter into the prepared baking dish. Scatter the fresh or frozen blueberries evenly over the top, gently pressing some down into the batter to create delicious jammy layers throughout the bars.
  4. Bake: Bake the batter for 35 to 40 minutes or until the surface turns golden and the center is set. Remove from the oven and allow the bars to cool for at least 15 minutes to develop their creamy custard texture.
  5. Slice + Store: Once cooled, cut the baked mixture into 8 bars. Store the bars refrigerated for up to 7 days or freeze for up to 3 months for longer preservation.

Notes

  • Add lemon zest to the batter for a bright, tangy cheesecake flavor lift.
  • Swap blueberries with raspberries or blackberries for a different berry variation.
  • For extra protein, incorporate 1 scoop of vanilla protein powder and 2 tablespoons of milk into the batter, adjusting texture as needed.
  • These bars taste especially delicious chilled, enhancing their cheesecake-like quality.
