Ladyfinger Base:
1 package ladyfinger biscuits (savoiardi)
Blackberry Syrup:
2 cups fresh blackberries (plus more for garnish)
1/2 cup granulated sugar
2 tablespoons lemon juice
2 tablespoons water
1 tablespoon blackberry liqueur (optional)
Mascarpone Cream Layer:
1 cup mascarpone cheese, cold
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 1/2 cups heavy cream, cold
Whipped Blackberry Topping:
1/2 cup blackberry puree (strained)
1/2 cup heavy whipping cream
2 tablespoons powdered sugar
In a saucepan, combine blackberries, granulated sugar, lemon juice, and water. Simmer over medium heat until berries burst and the mixture thickens, about 10 minutes.
Blend the mixture and strain to remove seeds. Stir in blackberry liqueur if using. Let cool.
For the mascarpone cream, beat mascarpone, powdered sugar, and vanilla until smooth. Separately whip the heavy cream to stiff peaks and gently fold into mascarpone.
Dip ladyfingers briefly into the cooled blackberry syrup and layer them in an 8×8 inch dish.
