  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch

For the Topping:

  • 1/4 cup shelled pistachios, chopped
  • Fresh blackberries for garnish

Instructions

  1. Prepare the Base: Mix the crushed digestive biscuits with the melted unsalted butter until evenly combined. Press the mixture firmly into the bottom of a lined 8×8 inch baking pan. Place in the refrigerator and chill for 20 minutes to set.
  2. Create the Pistachio Layer: Blend the finely ground pistachios, confectioners’ sugar, and heavy cream together until the mixture is smooth and spreadable. Evenly spread this pistachio mixture over the chilled biscuit base. Return to the refrigerator and chill for another 20 minutes to firm up.
  3. Make the Cream Cheese Layer: Beat the softened cream cheese with confectioners’ sugar and vanilla extract until creamy and smooth. Spread this evenly over the pistachio layer. Chill again until set.
  4. Cook the Blackberry Layer: In a saucepan over medium heat, combine fresh blackberries, granulated sugar, lemon juice, and cornstarch. Stir continuously and cook until the mixture thickens and becomes jam-like. Allow it to cool slightly before spreading evenly over the cream cheese layer. Refrigerate the entire dessert until fully set.
  5. Add the Topping and Serve: Just before serving, sprinkle chopped pistachios over the top and garnish with fresh blackberries for an elegant finish. Cut into 9 squares and enjoy.
